A RAW-MILK CHEESE WITH A PLEASANTLY SWEET TASTE, CHARACTERISED BY A TYPICAL YELLOW-OCHRE OR REDDISH-BROWN WASHED RIND.
Many alpine pastures in the Primiero area, from Valle del Vanoi to Passo Rolle, supply milk for making this cheese. One name above all: Malga Rolle, at the foot of the Cimon della Pala, on the pass of the same name at 1980 metres of altitude.
