TOSELA IS A FRESH CHEESE MADE FROM FRESHLY MILKED MILK. ORIGINATING IN PRIMIERO, IT IS DERIVED DIRECTLY FROM SHAPED FRESH CURD.
This cheese is a must of the kitchens of the Primiero area. You will be sure to find typical Tosela served with polenta and mushrooms in the local malghe and holiday farms. Sliced about one centimetre high, it is browned in a pan in melted butter and served piping hot. There is no salt in the processing of Tosela making it a very suitable and versatile product for use in cooking.
The origin of the name is uncertain. It may derive from "tosatura", the operation required to trim the curd that spills over the edges of the "fascera", or from the word "tósa", meaning young girl in the local dialect, because of its freshness.
